Broccoli Cheese Potatoes

Sometimes really great food just makes me giggle.
I definitely giggled with this little number. In fact, I couldn't stop talking about it! This cheese sauce??? Ohmygosh...

Sometimes, we're not feeding an army. Sometimes, it's just us at home with our hungry tummy and we want a really delicious lunch or dinner. Well, friend...THIS is it!

However, if you ARE feeding a small army (or your family), you could make up a whole platter of these things 
and you'd be quite popular :)
This is super simple and too delicious not to share. 

Broccoli Cheese Potatoes

2 medium russet potatoes
1 c. broccoli florets, cut small
2 slices of ham (lunch meat), diced
2 Tbsp. butter
2 Tbsp. all-purpose flour
1 c. Half and Half
½ tsp. creole seasoning
½ c. gruyere cheese, grated
½ c. sharp cheddar cheese, grated
1 c. water

Thoroughly wash and towel dry potatoes. Use either a sharp knife or fork and pierce each potato a few times on all sides. Place potatoes in the microwave and cook on HIGH for 3 ½ minutes. Turn potatoes over and cook for another 3 minutes.

In small sauce pot, heat water to boiling. Add broccoli and cook until tender. Drain.

Melt butter in separate pot over medium low heat. Whisk in flour and continue whisking and cooking for about 2-3 minutes.

Add Half and Half and Creole seasoning. Continue whisking until combined and creamy.

Add cheese and continue cooking on low and whisking until smooth. Add diced ham once cheese sauce is smooth.

Carefully remove potatoes from microwave and place on a plate. Slice each potato down the center and open slightly.

Arrange broccoli inside each potato. Pour cheese sauce inside and over potatoes. Serve hot.
